Paella is one of my favourite rice dishes.

The best part of this dish, which originates from Valencia, Spain, is the variety of ingredients. Depending on your taste, the ingredients you have at home, or whether you're in the mood for meat, chicken, seafood, or just a vegetable version, you can try them all.

Each one is individually delicious.

It's very enjoyable to eat with a crowd, and if you have a large outdoor fire and a paella pan, it becomes an even more delightful meal.

Today, I'll be making a paella using some vegetables, chicken, and shrimp without a special fire or pan at home.

Ingredients:

  • 1 red onion

  • 3 tomatoes

  • A handful of green beans

  • 1 carrot

  • 1 large red bell pepper

  • 1 lemon

  • 1 tablespoon tomato paste

  • 250g risotto rice

  • 250g shrimp

  • 100g chorizo

  • 200g chicken

  • 3 tablespoons olive oil

  • About 600ml vegetable or meat broth (your preference)

  • Salt

  • Black pepper

  • 1/2 teaspoon saffron

  • 1 teaspoon turmeric

  • 1 teaspoon chilli pepper.

Preparation:

  • Heat your pan and add olive oil and diced onion. Cook until the onions are sautéed.

  • Add the washed, trimmed, and halved or tripled green beans to the pan. Sauté for a few minutes, then add the diced bell pepper and carrots. Add the diced chorizo, sauté for a few more minutes, and finally, add the diced tomatoes and tomato paste to the pan. Stir for a minute or two, then add the rice. Add the saffron and turmeric and stir.

  • Add the warm broth (meat, chicken, or vegetable - your choice) over the entire mixture. Add a little salt.

  • To make it easier, heat another pan and add a bit of olive oil. Add the thinly sliced lemon peel and shrimp. Once the shrimp start to release their water and begin to brown, add the thinly sliced chicken pieces to the pan. Season with salt, chilli pepper and pepper.

  • Once everything is cooked and slightly browned, add the chicken and shrimp to the paella that is already cooking in the other pan. Thinly slice the lemon and add it to the pan as well. Allow everything to cook together for a few more minutes.

  • After turning off the stove, let the dish rest for a few minutes to allow it to infuse.

Enjoy your meal!
