Today, I have a cool and delicious recipe for hot summer days that I think everyone will love: pasta salad.
I plan to add a lot of ingredients to enhance the flavor, and I'll also make a light sauce.
Ingredients:
1 package of pasta (you can use any type of pasta you like; I prefer penne)
Roasted peppers
1 pack of feta cheese
Various greens (I used dill, parsley, and some basil)
Pickled gherkins and capers
Olive slices
Sun-dried tomatoes
For the sauce:
1 tablespoon mustard
1 tablespoon mayonnaise
Lemon juice
Olive oil
Salt
Black pepper
Lemon zest

It's very easy to make!
You can decide the cooking time depending on the type of pasta you choose, but the important thing is that we want the pasta to be slightly undercooked. Since this will be a salad, pasta that is too soft won’t be very tasty and won’t look very nice.
While the pasta is boiling, chop all the other ingredients into cubes. Drain the water from the pasta and let it cool on a plate. Don’t add the pasta to the other ingredients while it’s hot because we don’t want it to lose its crispness. You can add a little olive oil to the pasta to prevent it from sticking together.
Once all the ingredients are chopped, mix them in a bowl.

In another bowl, finely grate the peel of a lemon and squeeze the juice of half a lemon. Add the mustard, mayonnaise, olive oil, salt, and pepper, and mix well until you get a homogeneous consistency.
Now comes the most fun part: mixing the sauce with all the chopped ingredients and the pasta. Mix well.
This is so simple and incredibly delicious. Enjoy your meal!
